I Can Breathe Clearly Now

Whew, I'm finally feeling better. It's been a long week! I've wanted to dig all of my fall decorations out but just haven't felt like it. No biggie really, considering it was 97 degrees here yesterday!!



I picked up some honey on a recent drive out to Juliette. We went to get shots of the Whistle Stop Cafe, where they filmed Fried Green Tomatoes. I've been several times but never had a decent enough camera. Well this last time they had a big truck parked right in front of the cafe! So, once again, no pictures!

I'm including two of my favorite recipes using honey. Hope you enjoy them!

Chewy Monkey Bars

Makes 2 dozen

* 3 cups miniature marshmallows
* 1/2 cup honey
* 1/3 cup butter or margarine
* 1/4 cup peanut butter
* 2 teaspoons vanilla
* 1/4 teaspoon salt
* 2 cups rolled oats
* 4 cups crispy rice cereal
* 1/2 cup flaked coconut
* 1/4 cup peanuts

Combine marshmallows, honey, butter, peanut butter, vanilla and salt together in a medium saucepan. Heat mixture over low heat, stirring constantly. In a 13x9x2-inch baking pan, combine oats, rice cereal, coconut and peanuts. Pour honey mixture over dry ingredients. Mix until thoroughly coated. Pack mixture firmly into the pan. Cool and cut into 24 bars.



Honey Butterscotch Crispies

Makes 16 servings

* 1 cup butterscotch chips
* 1/2 cup honey
* 1/2 cup peanut butter
* 5 cups crispy rice cereal
* 6 oz. semi-sweet chocolate chips

In small pan, combine butterscotch chips, honey and peanut butter. Cook over medium heat stirring until chips and peanut butter are melted. In large bowl, combine cereal and butterscotch-honey mixture, toss to coat. Pour into greased 9x9-inch baking pan, press evenly. Sprinkly chocolate chips over top. Place under broiler and heat until chips are soft enough to spread. Spread chips evenly over top of cereal mixture. Cool completely, then cut into squares.
